Baked Oats with Coconut Yoghurt
Ingredients
1 cup wholegrain rolled oats
1 cup oat milk / other plant-based milk
1 banana (mashed)
1/2 tsp cinnamon
1 heaped tbsp nut butter (we used hazelnut)
1 tsp maple syrup (optional)
Pinch of sea salt
To serve
Our Vanilla and Chia Coconut Yoghurt
Fruit
Extra maple syrup or honey (optional)
Instructions
Preheat the oven to 180 degrees. Line a loaf tin with baking paper or grease with coconut oil. In a large bowl combine the oats, oat milk, banana, cinnamon, nut butter, maple syrup and salt. Pop in the oven to cook for 25-30 minutes until golden brown. Remove from the oven and allow to stand for 5 minutes or so before serving. Serve with your favourite Coconut Yoghurt and your choice of fruit. We love having our baked oats with roasted pear slices and our Vanilla and Chia Coconut Yoghurt.
