Mandarin Coconut Yoghurt Loaf

Ingredients

Loaf
Juice of one large mandarin (or 1/2 an orange)
Zest of 2 mandarins (or one orange)
1 drop of wild orange essential oil (optional)
2 organic eggs
1/4 cup of coconut sugar 
1/2 cup of our Vanilla Chia Yoghurt 
1/2 cup of almond meal
1/2 cup of oat four 
1/4 cup of coconut flour
1 1/2 tsp baking powder

Icing
1 cup of our Natural Coconut Yoghurt


Instructions

Preheat the oven to 160 degrees.

Combine all of the dry ingredients in a large mixing bowl. In another bowl whisk together the mandarin juice, zest, essential oil, eggs and coconut yoghurt. Pour this mixture into the dry ingredients and mix well to combine.

Grease a loaf tin and pour in the mixture.

Pop in the oven and cook for 40-50 minutes until golden brown and a skewer comes out clean.

Once the loaf has completely cooled ice with our Natural Coconut Yoghurt.

Store in the fridge.
