Fluffy Oat & Coconut Pancakes

Ingredients

2 eggs
1/4 cup of our Vanilla Bean Coconut Yoghurt
3/4 cup oat flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon 
Pinch of salt

Method

  1. Add the eggs and coconut yoghurt to a mixing bowl and whisk well to combine.

  2. Sift in the oat flour, baking powder, baking soda and cinnamon.

  3. Allow to stand for 10 minutes, so the batter can thicken slightly.

  4. Heat a little coconut oil in a pan over low-medium heat, and add about 2 tbsp of batter for each pancake. Cook for 2 minutes or until bubbles start to firm and then flip and cook for another 2 minutes until golden brown and cooked through.

  5. Serve with any toppings you’d like! We love some sliced banana, maple syrup and a generous dollop of our Vanilla Bean Coconut Yoghurt.
