Peach, Vanilla and Coconut Overnight Oats

Ingredients

1 cup rolled oats
1/2 cup water
3/4 cup Hawke’s Bay Peach Coconut Yoghurt
1 Tbsp honey or maple syrup (optional)
1/4 cup toasted coconut
1/4 cup almonds (roughly chopped)
1 Tbsp chia seeds
1 apple, julienned or grated
1 cup strawberries, cut into quarters

Method

  1. In a bowl, combine the oats, water, 1/2 cup of Coconut Yoghurt, and honey or maple syrup (if desired). Mix well to ensure everything is thoroughly combined.

  2. Place the mixture in the fridge overnight or for 4-6 hours to allow the oats to absorb liquid.

  3. In the morning, add the chia seeds, toasted coconut, half of the almonds and the apple to the oat mixture. Stir well to combine all the ingredients.

  4. Divide the prepared mixture into two serving bowls.

  5. Top each bowl with a generous dollop of the remaining Coconut Yoghurt.

  6. Add the quartered strawberries to each bowl and sprinkle over the remaining almonds.


Serves 2.
